Wow, I have to admit that I'm excited to see a use for duckweed. It's a cool plant, and a prolific grower in aquatic ecosystems.

It grows in my fish tanks - I never planted it but it has a tendency to turn up anyway. It's a bit of a pain, but if you keep harvesting it out, it's a good way to remove nitrates from the water.
